I have been cooking and loving it since 13 years of age. I began my London life at the Thai street food restaurant, the begging bowl. Here I was lucky enough to work with the likes of Jane Alty, Andy Oliver and Annita Potter (all previous employees of Mr David Thompson of Nham).
From this I took the role of head chef in the launch team over at the smoking goat, in London's Soho.
Over the last few years I have also taken the role of development chef with EatGrub. I have been with this amazing company from the start and we focus on changing preconceptions towards eating insects in the Western world. You will see what I'm up to over at Grub in many of my posts.
Most recently I have began my own restaurant concept called 'Pestle London' (@pestlelondon), which focuses on making the food I love most, from scratch. My efforts are concentrating on hand made Thai curries, noodles and small plates. Pestle London will be popping up around the city in the form of pop-up restaurants, supper clubs, market stools and cooking classes! You can keep up to date and book via this blog.
Ever since I began my career I have also always had a passion for writing about food, not just any food writing, a perspective from behind the stove, the good, the bad and the ugly, and a few of my recipes of course.
So welcome to the weird and wonderful world of Thai food and insects in London, I am your host Seb Holmes. Now I plan to take over this little space of the Internet, with a key focus in boring the world with this passion for writing- welcome to it!
