"Nigel Gildon Founder: is the owner and head chef of Wayne’s Big Mamou, a world-renowned Cajun restaurant located in the heart of downtown Lafayette. Nigel’s passion for Cajun cuisine began at a young age, when he would help his grandmother prepare traditional dishes in their family kitchen. After spending several years working as a chef in some of the most prestigious restaurants in New Orleans, Nigel decided to open his own establishment, and Wayne’s Big Mamou was born.
